PEA AND PARSLEY PESTO

Ingredients:

½ bunch of parsley
1 cup of frozen peas, cooked (according to package directions) and cooled
¼ cup of almonds
1 clove of garlic
1 teaspoon of lemon juice
salt, pepper

5 tablespoons of olive oil

Directions:

  1. Blend all ingredients, except olive oil, in a blender.
  2. Add 5 tablespoons of the olive oil (add more if necessary) and blend until completely combined.
  3. Tastes great served with brown rice penne.
