1 lemon, juice of
4 tablespoons of horseradish
- Cook unpeeled beets for 1 hour.
- Strain and peel (while still warm).
- Grate on a coarse grater.
- Add lemon juice and horseradish, mix thoroughly.
Best to store in the fridge in jars that were sterilised in boiling water.
