BEET SALAD

Ingredients:

1 kg / 2.2 lb beetroot
1 lemon, juice of
4 tablespoons of horseradish

Directions:

  1. Cook unpeeled beets for 1 hour.
  2. Strain and peel (while still warm).
  3. Grate on a coarse grater.
  4. Add lemon juice and horseradish, mix thoroughly.

Hint:

Best to store in the fridge in jars that were sterilised in boiling water.
